			<content:encoded><![CDATA[<p>The 2010 <a href="http://www.skillsforchefs.co.uk" target="_blank">Skills for Chefs</a> conference began yesterday, hosted once again at The University of Sheffield, with some the country’s leading chefs joining in to share their expertise with professionals and students from the catering industry.</p>
<p>The keynote address came from Catherine Gazzoli, CEO of <a href="http://www.slowfood.org.uk" target="_blank">Slow Food UK</a>, the organisation dedicated to making food good, clean and fair, by empowering local communities and individuals who want to embrace and discover sustainable and good quality food – fresh cooked and enjoyed slowly; an antidote to modern fast food.</p>
<p>There are now more than 1000 Slow Food groups in more than 150 countries &#8211; including one in Sheffield &#8211; bringing together local people who care about agriculture, food, health and the environment.</p>
<p>The first chef to hit the demo kitchen was Atul Kochhar chef patron of the acclaimed Indian restaurant <a title="Book a table at Benares" href="http://bookings.sheffschefs.com/res/Landing.aspx?p=UK-SHEFFSCHEFS&amp;command=viewrestaurant&amp;sfid=101686&amp;culture=en-GB">Benares</a> in London’s Mayfair.  In less than 40 minutes, he had put together a feast of three Indian dishes, sharing some of his expertise along the way.</p>
<p>A Michelin starred chef, Atul knows how to create mouth watering Indian dishes, so what are the secrets of great Indian food?</p>
<p>Spices, he advised, should be used in just the same way as one would season with salt and pepper and they should be added as part of the seasoning balance.</p>
<p>“Don’t be scared of spices,” he said “nothing is forbidden, but ease up on the chilli – you shouldn’t be trying to prove something by adding quantities of chilli.”</p>
<p>He explained that spices flavour a dish when their essential oils are released into the cooking process, so for this to happen, it is imperative that any oil is hot before they are added.</p>
<p>Referring back to the speech of Catherine Gazzoli, Atul also advocated the importance of fresh cooking and spoke with some awe about a recent visit to the far east, where locals cook completely from scratch – if they need turmeric, they reach for the root, not a jar.</p>
<p>All in all, it was a terrific opening, which gave many of us pause for thought about our modern food lifestyle and how important it is for us to rediscover the origins of our food.</p>
<p>The day continued to showcase the talent of leading chefs, including Claude Bosi of Hibiscus restaurant, Andrew Bennett and Sarah Hartnett of Park Lane Hotel and Glynn Purnell of Purnell’s, Birmingham.</p>
<p>It was a great opportunity to network with people from the catering industry and to gain an insight into current restaurant trends from some of our leading industry professionals.</p>

<p>As operations director, Christian has drafted in new blood in the kitchens and front-of-house at the Walnut Club Live on Ecclesall Road and the Walnut Club Brasserie in Hathersage.</p>
<p>The chef’s CV includes Langan’s Brasserie and The Ivy in London and Sheffield’s Blue Room Brasserie. Latterly he has been running Hillsborough and Sharrowvale fishmonger Manns with brother and fellow chef Danny.  While continuing to operate Manns, the brothers have now returned to the kitchen and plan to revitalise the two Walnut Club outlets.</p>
<p>“They are both high-quality venues, but it’s a very competitive market out there. We have completely revised the menus to offer affordable classic food, with more specials,” said Christian. Choices include two courses for £11.95 or three for £16.95, with Sunday roasts for £9.95.   New lunchtime and evening menus are to be introduced at Hathersage by  the end of the month, continuing the policy of providing good food at  very keen prices.</p>
<p>“People who think about going to the pub for value should give us a try –  we believe we’re even more competitive,” he added.</p>
<p>Managing the Ecclesall Road venue is Chris Barradale, brother of Arctic Monkeys manager Geoff, with Craig Macfarlane as front-of-house manager at Hathersage. Whilst in the kitchen, the  Szurkos are joined by chefs Iklat Hussain, formerly of Marco@Milano’s, and Richard Butler from Loch Fyne.</p>
<p>The new team want customers to know they can rely on both the Walnut Club venues for good food and service and are keen to get as much feedback as possible.</p>

			<content:encoded><![CDATA[<p>Although the recession means that people are looking to make cutbacks in every other aspect of their finances, the occasional treat of eating out at a restaurant remains a luxury that most of Britain are reluctant to forgo. Up to 70% of people still like to dine out at least once per month, despite the rising prices and VAT, and restaurants are constantly running deals and exclusive offers to help ease the burden on the pockets of their customers.</p>
<p>Hence the rising popularity of e-vouchers. As with the traditional voucher; found in newspapers and magazines then cut out and taken to a retailer for a discount on goods, an e-voucher can also be redeemed at stores, restaurants and various other places. But there’s an added advantage: the e-voucher can be found online and printed off just when you want it. No more last minute panics to find that money off coupon you’ve had in your wallet for weeks before finally getting round to using it, only to realise it’s fallen out somewhere. Simply find the voucher you want, print it out, and off you go to save some money.</p>
<p>There are many websites which offer a wide range of e-vouchers for all participating retailers, and many have a search facility so you can find vouchers for either a specific retailer, or for all retailers in your local area. Some, such as moneysupermarket.com, offer a registration facility; enter your email details and you can have the latest local vouchers sent to you as soon as the offer begins.</p>
<p>Sometimes the offer may come in the form of a code, which should be entered during the booking or ordering process if purchasing goods or reserving a table online. Some retailers and restaurants run exclusive deals which can only be redeemed with a voucher from a specific site. Some deals are available to all customers without a voucher being required, but may only advertise the offer on websites. Either way, it’s worth registering or visiting the voucher site often to make sure you don’t miss out on any great deals.</p>
<p>Moneysupermarket currently has several <a title="Moneysupermarket e-vouchers" href="http://www.moneysupermarket.com/vouchers" target="_blank">e-vouchers</a> available which are redeemable at restaurants and other retailers throughout Sheffield.  Ask, on Cambridge Street, is offering 2 main course meals for £10 with a printable voucher and you could get up to 50% off  Tapas at <a title="Moneysupermarket La Tasca vouchers" href="http://www.moneysupermarket.com/vouchers/store/la-tasca/1090/1/" target="_blank">La Tasca</a> on Ecclesall Road.</p>

<p>The Chatsworth Country Fair will be held from September 3rd &#8211; 5th and now has a demonstration tent as part of its ‘Fine Food Village’ programme, where Simon Bradley will be appearing on Friday 3 September at 12 noon.  Simon trained at The Ritz in Paris for several years before honing his skills working with the internationally renowned Raymond Blanc at LeManoir.</p>
<p>“Simon has a few culinary ideas up his sleeve for Chatsworth, so while  he is keeping his plans a closely guarded secret for the moment, we are  already looking forward to what has become a ‘must-attend’ event in the  local food and drink calendar.” said East Lodge managing director Iain  Hardman.</p>
<p>The Chatsworth Fair will boast over 300 trade stands with local crafts and produce from the heart of the Peak District and scores of showground attractions around the estate, many with a local country theme and it continues to draw crowds of over 90,000 visitors from all over the UK.</p>
